Rainy day yesterday, so I spent some serious time cooking in the afternoon. For dinner we had homemade fried rice and General Tso's chicken. The chicken came out awesome; I made the sauce in the morning and left it in the fridge all day, the chicken got battered and fried before getting cooked with the sauce and a bunch of scallions. Very very good. Most of the new recipes we try out are from the internet, I used this one, with a couple variations from another one I found.
For desert was strawberry rhubarb pie, made in one of Julie's own homemade deep dish pie plates. Julie and I agreed it was the best strawberry rhubarb that either of us had ever had (sorry Mom, yours was good last weekend too). It also was pretty simple:
2-9" pie crusts
3 eggs
1/4 c milk
1 3/4 c sugar
1/3 c flour
1 lb chopped rhubarb (about 3-4 cups)
1 1/2 c chopped strawberries
1 tbsp butter
Beat eggs w/ milk; stir in flour and sugar. Fold in rhubarb and strawb. Pour into pie shell, dot with butter. Put on top and cut some slits in the crust. Bake at 400 for an hour (or Ia little less in our case). Yum.
I think that shedding the ell bees will be harder if I keep making this type of food.
